Am I really starting a blog about something six-months in?
Yes, I am!
I've realized that there isn't much information out there about food sensitivities. There are a ton of books about allergies and food intolerance's, but not much about food sensitivity. I wanted to start this blog for anyone who has sensitivity issues and is having a hard time dealing with the annoying elimination diet. I have no one to discuss this stuff with that actually understands what I'm going through, so even if I don't get one single reader...at least I'll get it out. It's frustrating, at best!
I'm sensitive to SEVERAL foods...foods that seriously limit what I eat on a daily basis. Long story short, (or possibly a little long), I had an ulcer and gastrointestinal reflux disease or in other words...GERD. I was prescribed Nexium and told I had to be on it for life. I hate taking medicine, so I looked for another way out, especially since I was developing side effects. I stopped the Nexium cold turkey and went through some serious discomfort, but then I tried a doctor devoted to integrated natural health.
Upon hearing my symptoms my doctor recommended that I get a blood allergy/sensitivity test. They range from 3+ to 0. I'm not allergic to a single thing, (that they found) but I am severely sensitive to almost everything. Here's the short list of items I had to cut from my diet and these are just the 3+:
wheat, dairy, corn, soy, oats, most fish, along with several fruits and vegetables. A lot of other foods came up as 2+ or 1+, there were so many that my doctor had to have me incorporate 1+ items into my diet so I could get proper nutrition. The main diagnosis? Leaky gut syndrome!
Fast forward 6 months of not being able to eat 90% of my favorite foods and here I am 30 pounds lighter but STILL having minimal symptoms, so now I have to continue this diet plan for another 6 months. It's like starting all over again.
At the end of my blog every day I'll try and post my meal plan. Now these foods are in line with my sensitivities...so if you haven't been checked I seriously recommend you do if you have health issues. Please don't follow my plan. Instead check with your doctor and follow what your own plan. I am NOT a doctor nor a nutritionist.
Now for the meal plan:
Breakfast: 3 pieces of center cut nitrate free organic bacon, sliced fried (in olive oil) potatoes with salt and pepper, a tangerine.
Lunch: A fruit smoothie with raspberries, mango, strawberries, orange juice, tangerine, hemp protein powder, ground flax, glutamine powder
Snack: Carrots & salsa. Apple and natural peanut butter
Dinner: Beef stew (homemade)
Now I know this post was probably super boring...but it'll get better as we continue on this journey. I hope.
